How to Make Good Biryani at Home

Easy Biryani Recipe
(साधारण बिरयानी रेसिपी)

Ingredients / सामग्री:

  1. Rice (Basmati) – 1 cup (चावल – 1 कप बासमती)
  2. Chicken/Mutton – 500g (चिकन/मटन – 500 ग्राम)
  3. Onions – 2 large (प्याज – 2 बड़े, पतले कटे हुए)
  4. Tomatoes – 2 (टमाटर – 2, कटे हुए)
  5. Yogurt – 1/2 cup (दही – 1/2 कप)
  6. Ginger-Garlic Paste – 1 tbsp (अदरक-लहसुन का पेस्ट – 1 बड़ा चमच)
  7. Coriander Leaves – 1/4 cup (धनिया – 1/4 कप, कटा हुआ)
  8. Mint Leaves – 1/4 cup (पुदीना – 1/4 कप, कटा हुआ)
  9. Biryani Masala – 2 tbsp (बिरयानी मसाला – 2 बड़े चमच)
  10. Cloves – 4-5 (लौंग – 4-5)
  11. Cardamom – 2-3 (इलायची – 2-3)
  12. Bay Leaf – 1 (तेज पत्ता – 1)
  13. Cinnamon Stick – 1-inch piece (दालचीनी – 1 इंच टुकड़ा)
  14. Cumin Seeds – 1 tsp (जीरा – 1 छोटा चमच)
  15. Turmeric Powder – 1/2 tsp (हल्दी – 1/2 छोटा चमच)
  16. Red Chili Powder – 1 tsp (लाल मिर्च पाउडर – 1 छोटा चमच)
  17. Garam Masala – 1/2 tsp (गर्म मसाला – 1/2 छोटा चमच)
  18. Saffron – a pinch (केसर – 1 चुटकी, दूध में भिगोकर)
  19. Ghee – 3 tbsp (घी – 3 बड़े चमच)
  20. Oil – 2 tbsp (तेल – 2 बड़े चमच)
  21. Salt – as per taste (नमक – स्वाद अनुसार)

Method / विधि:

  1. Cook Rice / चावल उबालना:
    • Rice ko achhe se dhokar 20-30 minute ke liye bhigo lein.
    • Ek pan mein paani garam karein, aur usmein cloves, cardamom, cinnamon, aur bay leaf daal kar chawal ko 70% tak paka lein.
    • Jab chawal thoda paka ho, pani nikaal kar alag rakh dein.
  2. Prepare Meat / Chicken तैयार करना:
    • Chicken ya mutton ko dhokar achhe se saaf kar lein.
    • Ek pan mein 1 tbsp tel garam karein aur usmein sliced onions daal kar, unhe sunehra hone tak bhunein. Phir inhe alag rakh lein.
  3. Cook the Meat / Chicken पकाना:
    • Ushi pan mein 1 aur tbsp tel daal kar, ginger-garlic paste daal kar bhunein.
    • Ab chopped tomatoes daal kar, unhe soft hone tak paka lein.
    • Mutton ya chicken ko daal kar, turmeric, red chili powder, aur biryani masala daal kar bhunein.
    • Dahi daal kar achhe se mix karein aur 15-20 minute tak dhimi aanch par pakne dein.
  4. Layering the Biryani / बिरयानी की परतें लगाना:
    • Ek bade bartan mein pehle cooked meat ki ek layer daalein.
    • Phir uske upar cooked rice ki ek layer daalein.
    • Chopped coriander, mint, fried onions, aur saffron milk daal kar layer karte rahein.
  5. Dum Process / दम पर पकाना:
    • Biryani ko dhakkan se achhe se bandh karein ya dough laga kar seal kar lein.
    • Biryani ko dhimi aanch par 20-30 minute tak pakne dein, taaki sab flavors achhe se mix ho jayein.
  6. Serving / परोसना:
    • Biryani ko dhakkan khol kar gently mix karein aur garma garam serve karein.
    • Iske saath raita ya salad serve karein.

Tips / सुझाव:

  • Aap apne taste ke hisaab se masalon ka amount adjust kar sakte hain.
  • Agar aapko zyada spicy pasand hai, toh zyada red chili ya green chilies daal sakte hain.
  • Aap biryani mein rose water ya kewra essence bhi daal sakte hain, jo uska flavor enhance karte hain.
